Bradley Bisquettes

Cold smoking at home

Cold smoking is a process of smoking meat without exposure to heat. It can be a time-consuming and slightly more complicated compared to hot smoking.

In cold smoking, smoke is generated in a separate chamber from food; it is then passed through pipes to cool before reaching the meat. The amount of time needed to smoke depends on the meat being used.

This process creates more complex flavours and textures in meat that don’t occur in regular smoking. Meats yield a more salty flavour with cold smoking and this is often used with ‘cooking’ salmon.
